🧡 SWEET CARROT & CUMIN 🧡
My soup for the week has been this blend 🙌 sweet and flavoursome, and, easy to make! Just pure organic vegetable goodness.
You will need:
2 small to medium sweet potatoes
1 kallo veg stock
1 teaspoon of cumin
🌈 Wash, peel and chop the sweet potatoes, carrots and leeks and place into a pan with 1000ml of water, and 1 kallo veg stock cube.
🌈 Simmer on a low heat for 30 minutes.
🌈 Blend with the teaspoon of cumin, and a sprinkle of salt and black pepper! And serve or save for lunches - made me 4 portions for this short post-Easter-4-day-week!
Health benefits of cumin:
🌈 Cumin is very dense in iron, providing almost 20% of your daily iron in one teaspoon.
🌈 Full of antioxidants! Free radicals are lone electrons that cause inflammation and damage DNA. Cumin contains antioxidants that stabilize free radicals.
🌈 Cumin's traditional use as a seasoning may restrict the growth of infectious bacteria and fungi. This may reduce food-borne illnesses.
🌈 Cumin contains multiple plant compounds that decrease inflammation in test-tube studies. It is not clear if it can be used to help treat inflammatory diseases in people.
