Another amazing class with one of my most favorite groups of kiddos from the #goleta union school district as part of the @foodbanksbc Kids Farmers Market #afterschool Program.

Produce of the month is Tomatoes and we also received Persian Cucumbers, Broccoli and Lemons.

Thanks to a tip from @sbunifiedschoolfood 😘 I splurged on new reusable plastic kid friendly knives and was able to involve so many more kids in the prep, which they were stoked on!!
.
I split the kids into two groups - Team Salsa and Team Salad and we came back together to dress and finish each dish.
.
Team Salsa made a delicious salsa using tomatoes, cantaloupe, lime, onion, mint, cilantro and a little @frontiercoop Mexican Fiesta Blend (no salt).
.
Team Salad chopped broccoli into teeny tiny pieces (a great way for raw broccoli to go virtually unnoticed), tomatoes, cucumber and then made a dressing of fresh squeezed lemon juice, maple syrup and mustard (to release the broccoli’s #sulforaphane).
.
As always the kids loved it, took recipes and all the key ingredients home and asked for 2nds and 3rds. They were surprised that they: 1) didn’t notice the onions despite telling me loudly that they “hate onions”, 2) loved the raw broccoli, 3) melon and tomato goes really well together and 4) feel confident that they could “easily” remake this at home!!!

My classes aren’t about being plant-based or vegan, they’re about arming kids with tools and information to make better food choices and to empower them to learn how to make delicious and nutritious food. It is also a safe and loving environment where kids dealing with #foodinsecurity can be fed and take nourishing food home to their families. I’m so humbled and honored to be a volunteer #FoodLiteracy educator for our incredible #foodbank.

Definitely realize that my millenial side gets showcased on here more than my dietitian side lol. To balance it out here is a  pic of some veggies I made. Do I get bonus points for the veggies being organic and local 🤓?

Daily health tip: somewhere along the lines people got the misconception that the only way to get nutrients from your veggies was if you ate them raw. Well they're raw-ng as hell. 
It's true certain vitamins get destroyed by heat (for example vitamin C). Also boiling vegetables can cause many of the nutrients to be reached out and then destroyed by the heat. However baking, roasting, grilling, steaming, and sauteeing your veggies can still preserve the nutrient content but make it easier to digest and more edible.

I introduced professional Annie the other day and now I want you guys to meet all the other parts of me.

In my previous post, I said that I am much more than a Registered Dietitian, health coach, and diabetes educator.
.
I have two kids, Braxton and Lucy, who light up my world, and a husband, Corey, who truly is more than I expected to find in a husband (I know that is super over the top to many but it’s true!).
.
Being healthy is super important to me in a professional setting and for my clients but even more so for me and my family. I want to be around for a long time for them and so does Corey. And we know what that takes. It takes establishing healthy habits now so we can be on autopilot with this lifestyle later in life.
.
We are also showing our kids what a healthy lifestyle looks like so they will not have to worry about health issues later that could have been prevented by healthy nutrition and exercise. This does not mean we’re “crazy” and that we never let our kids eat sweets but it does mean that it doesn’t happen all the time. And most importantly, our kids are learning why.
.
So I encourage you to make these changes for the long haul.... so you can move around without pain, play with your kids, avoid the anxiety of dealing with a chronic disease.... think about the future and what you want that to look like for you.

Our school looked at a Dr. Sandra Blooms Sanctuary Model and the neuroscience of trauma, wellbeing and learning systems. This quote from #zygotsky is so pertinent to all of the culture we’re immersed in. The culture that we follow on social media, the friends and families we interact with along with broader systematic and global culture. We decide as a community the kind of culture we want. #teachingandlearning

We are back with "What's in your fridge? Wednesday"

Today's meal required creativity and staples from the cabinet. Not much was in the chiller so I looked in my freezer too. Here is the recipe that you too can make at home! 
_ _ _ 
Chipotle Black Bean Gravy Patty over stiff potatoes and a side of sliced apples. 
_ _ _ • 1- defrosted chipotle black bean patty • 1- 4oz can mushroom stems & pieces • 1/4 cup chopped yellow onion • 1- 4oz pkg low sodium instant mashed potatoes
• cooking nonstick spray •1- dry pkg low sodium turkey gravy • 1 tsp butter •1- apple • dry seasonings: garlic powder, onion powder, black pepper and ionized salt

1) prepare gravy & instant potatoes separately according to direction on pkg 
2) heat skillet to medium, add butter & spray interior 
3) slice patty then add to skillet. Rotate to evenly toast and heat through (about 5 mins). 4) Dump drained mushrooms and onions into skillet. Cover and cook stirring occasionally (about 5-7mins). 5) remove patty & set aside. Add gravy into skillet. Heat for 5mins. Season to taste.
6) slice apple & put on plate. Scoop some potatoes onto plate. Scoop gravy mixture onto plate. Place patty atop gravy mixture. Enjoy!! _ _ _

Creating a healthy lifestyle can be challenging for many. The word DIET is often associated with giving up all the great tasting flavorful foods to eat the healthy not so great tasting foods. Creating a healthy lifestyle can be challenging for many. The word DIET is often associated with giving up all the great tasting flavorful foods to eat the healthy not so great tasting foods. However, I am here to tell you that this is not true. There are many ways in which we can create a healthy lifestyle by making small changes in how we eat and keeping foods in our diet that we love. Fad diets surround us and many claim you’ll get amazing results. The truth is when we lose weight too fast, we are not losing fat, we are losing lean tissue and muscle. Belonging to The Brassica family of vegetables, broccoli is one of my favourite super foods! 🥦An amazing source of vitamins, minerals, fibre and antioxidants such as sulphorophane which is proving to be beneficial in reducing cholesterol, reduce blood sugar levels, cancer prevention and reducing inflammation. When we consciously make decisions to eat food high in processed (and pro inflammatory) fats and sugars such as fast foods or prepackaged foods, we are therefore choosing not to eat whole foods such as fruits, veggies, legumes, nuts and seeds and organic meats. You might not think much of it at the time but when there’s proof to let you know those decisions, overtime, can shorten your life span, wouldn’t you think twice about your food choices?

Proteinella from lidl it is soooooo nice. Low in sugars high in healthy fats and a good balance of carbs and protein. Had this as a snack with 50g of 0 fat high protein yogurt to give me a little more protein and carbs. Highly recommend it tastes just like nutella!! These are the sort of things you can still enjoy if you know the right things to go for. 😋

In our 4th grade program, we find that self-proclaimed salad haters suddenly change their mind when given a chance to make their own vinaigrette and chop their own veggies. People with sedentary lifestyle, (Least moving people) generally have this habbit of snacking all day long. Weather its chips or any fruits. Anything that is healthy or high in protein dosnt mean you keep on hogging all day.
Have timely meals, divide it into 4 to 6 meals a day. 
Keep drinking water and stay hydrated this will also help you control your portion of food you eat. 🤘

After the live I had this saturday I thought it would be useful to summarize the main points of our conversation. We all heard the words “processed food”, usually it is used in a negative meaning. However, it is not always the case. Food processing is the alteration of foods from the state in which they are harvested or raised to make them appropriate or available for consumption. Without the food industry processing food on a big scale, it would not have been possible for us to survive, due to the demanding needs of feeding the growing world population.

However, with the advance of mechanization and the acceleration in development of food science techniques, the main purpose and nature of food processing has been shifted from preserving whole foods towards production of a vast range of palatable products made from inexpensive ingredients. Thus, food supplies recently are being dominated by heavily processed ready-to-eat products.  This arose the need to a new classification that groups foods according to the nature, extent and purpose of the industrial processing they undergo. This was proposed by researchers of the Department of Nutrition, School of Public Health, University of São Paulo.

NOVA food classification:
⠀
1⃣Unprocessed or minimally processed foods
edible parts of plants (seeds, fruits, leaves, stems, roots) or of animals (muscle, offal, eggs, milk), and also fungi, algae and water. These are foods are prepared and cooked at home or in restaurant kitchens in combination with processed culinary ingredients as dishes or meals.

2⃣Processed culinary ingredients
substances derived from Group 1 foods or from nature by processes that include pressing, refining, grinding, milling and drying. Like flour, oils, butter, sugar and salt. I advocate for an inquiry and inquisitive approach for health education in schools. We may be our own personal health expert for ourselves but when it comes to educating others we need to take a step back from our own beliefs and bias to help students develop skills and knowledge to navigate health information. When teachers ensure that learners have an opportunity to critically engage with health information rather than to simply be passive recipients of it, it enables students in a powerful way. #teachingandlearning .
