I recently learned that the Sambucus tree (aka Elderberry tree) grows wild in SOCAL and so far have found four, two of which back up to my in laws property 💗
I’ve used elderberry syrup for immune support for sometime now, but have never read up on the incredible properties of the elderflower until I discovered these sweet blossoms on my father in laws tree. This sweet flower is -
- Anti-inflammatory - Chalk full of bioflavonoids which contain antiviral properties
- Anti-bacterial - Reduces blood sugar and works similarly to insulin
- Softens skin and reduces brown marks and wrinkles
My little flowers are being infused in oil and in a few weeks will make for an excellent skin treatment (I hope! ☺️😉)
We just want to send a BIG thank you to our rockstar volunteers, Kat & Sahra, for coming all the way out to the @SantaCruz_VegFest and doing such an amazing job tabling! We met so many people who were thrilled to learn about the work we do and we hope to be back in Santa Cruz soon! ⠀
National Farmworker Awareness Week: This year, a total of 47 partners coordinate actions and events across the country. 12 of those were coordinated by SAF staff, alumni, Solidaridad interns and Levante students. NFAW partners from Florida, New Mexico, California, Idaho, New York, Arizona, and beyond hosted truly powerful and creative events like trivia on social media, an astronaut on campus, panel discussions, film screenings, bandana decorating, a picket and so much more! Our daily message NFAW banner and poster images were spread widely on social media. “This event was incredibly powerful and eye-opening for everyone involved. We had a wonderful turnout and the panelists seemed to feel like we were in a space that was safe and supportive.”

Artwork by @hulyen // Police in Negros Oriental in the Philippines massacred 14 farm workers and organizers last week. At least 180 farmers have been killed during the Duterte administration, 40 of which were from Negros island. This is a brutal and cruel fight for land and power 😤 Please read more about this atrocity and learn how you can support our people back home. We FilAms have a lot of privilege out here. Spring is here and we couldn’t be happier - I have three happy places and one of those places is @underwoodfamilyfarms 🌱💗💫
Food, outdoors, flowers, animals, and family.. everything I love in one place ❤️
Do you have a favorite place you visit during Spring time!?
It’s officially SPRING and everything is coming to life - California sage is still growing strong, and young wild fennel is coming back 🌱
I have been waiting months for the fennel to come back and here is why -
- aids digestion and constipation
- reduces inflammation
- boosts immunity
- decreases blood pressure
- excellent for bone health
It amazes me how creations instincts are to survive, heal, and fight for life. Even in something as invasive at wild fennel! It’s begging to live and in it’s growing it gives life and health. I think it speaks loudly to God’s character and desire for his creation to live abundantly and in health - GROWING and GIVING.
Where do you see Gods character in nature?

Why dedicate an entire Instagram feed to nature and things that showcase the natural world? Why be concerned with how we exploit nature for profits gain?
I've thought about this question a lot and have reflected deeply about how nature has impacted my story.
For me personally, some of my lowest moments in life have brought me back to nature and have revealed a loving Creator - a Creator that loves, loves all things natural, messy, broken, and beautiful.
Nature has always been a reflection of who God is- his handiwork is manifested in the soil, the seed, the weather, the fields that die and return to dust only to be re-born by the baptism of rainfall.
In my opinion - I don't think there is anything in nature that shouldn't be held in high esteem.
In this week of time at work or spent with family, spouses, children, and friends - I hope you find yourself admiring the handiwork ABOVE you and BELOW you! There is BLESSING in this admiration.
Where has nature impacted your story?
We were so excited to hear about this from Omonigho Oiyemhonlan as this may be a more practical avenue for more people of color to become a lawyer. ⠀

Two weeks ago Wilson Perez from the @immokalee.workers and Jasiel Lopez from the @fairfoodnation came to speak to my class about farmworker justice. Wilson shared with us his experience of human rights abuses against farmworkers in the tomato fields of Immokalee, Florida including wage theft, sexual and physical assault and denial of rest breaks and bathroom breaks by farm managers. He spoke of the extremely low wages farmworkers receive paid out by the pound of tomatoes picked rather than by the hours worked, and of cases of modern-day slavery and human trafficking (farmworkers forced to work against their will).
He also told us about how in 1993 farmworkers organized and started to fight back. In 2011, they launched the Fair Food Program , an inspiring model of Worker-driven Social Responsibility based on partnerships between farmworkers, tomato growers, and retail buyers. Through the Fair Food Program, retail buyers commit to paying an extra penny per pound of tomatoes and refuse to buy from any suppliers that do not follow fair working guidelines. So far, McDonald’s, Subway, Chipotle, Taco Bell, and Burger King have all signed on. Wendy’s, however, is holding out. They are at Ohio State today boycotting the University’s contract with the restaurant chain.

I just started a small new series exploring the idea of being barren, and not in the typical sense of not being able to conceive a child (although that too), but in a wholistic, human being kind of way -
We all feel it. Barren, that is. It’s part of being human. We see it in a field that has been exasperated and can no longer produce fruit. My work is usually a reflection of the break between us and Creation, specifically how men and women exploit the natural world, but this series is a depiction of when one suffers we all suffer. When our land is barren and nutrient deprived, our table is barren, community dissolves, health becomes a pill, and we too become barren - in our bodies, and even our souls.
I would love to hear your thoughts on the connection between us and our land, specifically speaking of this idea of being barren!

This week I was listening to the latest episode on the @wellnessmama podcast, where Katie mentioned that by 2050, there will be MORE plastic in the ocean than FISH 😮 I will be the first to admit that I’m still trying to reduce my use of single use plastic (like at Mexican restaurants when you want salsa from the salsa bar?).
I think we all, including myself, need to start looking at waste differently. What are ways we can RE-USE, or RE-PURPOSE our waste? Not just plastic, but food and other recyclables.
This is what I absolutely love about working with paper and natural dyes. 90% of the paper you see in my work came from trash. That’s right! THRASH! Old envelopes, colored on construction paper, junk mail, old magazines.. you name it.
What are your thoughts on single use plastic and do you and your family have any creative solutions to re-purposing or re-using waste?
Hello friends ❤️ I wanted to take a moment to introduce myself - my name is Sarah and I am the vision behind The Beloved Table.
I'm an artist, nature lover, ethical consumerism advocate, kingdom keeper, and deep down I truly believe that food CAN save the world - that bringing people back to the table, back to family and community, back to nature, back to the dirt and ultimately back to the Creator can restore and redeem a lot of the pain that comes with being human (can I hear an AMEN!?)
I'm a wife and a mother to two girls. My mothering is deeply rooted in these ideas and my dream and prayers for my girls is that they will grow up as strong women who look and see the world around them as SACRED and deeply loved by its Creator - that they too can partake in holy stewardship by coming to the table, to love and be loved ❤️

In the final push to pass the Farmworker Fair Labor Practices Act in NY state (S2837/A2750)! (Also known as the “Farmworker Bill of Rights.”) We’re tearing down the racist “wall” built in the 1930’s to exclude farm workers from the rights of other hourly-wage workers. •••••
Help us finally dismantle this oppressive legacy of Jim Crow violence. CALL your NY state political representatives! Ask them to become a bill co-sponsor and ask them to urge undecided colleagues to pass this bill in THIS legislative session! Farm workers deserve equal rights NOW. •••••
