It’s so exciting to be a part of the SIRI Commission’s working group on food technology! Together with other experts from across the food system, we are exploring the potential of artificial intelligence, biotechnologies such as CRISPR, as well as more fundamental changes such as increased production of plant protein, new foods, bioeconomy and what it will mean and demand from Danish food culture.

The SIRI Commission was established  with the aim of focusing on artificial intelligence and digital disruption and the influence it has on Danish society. In the spring and summer of 2019, the SIRI Commission will focus on artificial intelligence, food and climate. The task is to provide future scenarios and recommendations on how we can use better use technology in agriculture and food production to secure a better future in a world where we will have four billion additional people living on this planet and at the same time have the goal of achieving a maximum temperature rise of 1.5C.

The Presidency of the SIRI Commission is held by Ida Auken, Member of Danish Parliament and member of World Economic Forum, and Thomas Damkjær Petersen, Chairman of the Engineering Association, IDA.

🌏It’s both Earth Day AND Stop Food Waste Day this week, and it’s good to see them getting some increased coverage because there really isn’t a #planetb. But although meat reduction is getting a lot of attention at the moment, reducing food waste is also a massive part of moving towards a more sustainable food system. The amount of energy needed to grow, produce and transport food all goes to waste if it just ends up in the bin.

⁉️The stats are pretty shocking. More than 40% of food in high income countries is wasted, and us Brits chuck out 1.4 million bananas every day. [GLOPAN, 2018] [WRAP, 2017] .
.
♻️But an interesting policy report released last month by the EU [REFRESH, 2019] suggests that (perhaps not surprisingly…) campaigns that exclusively provide information and increase awareness about the negative impacts of food waste don’t seem to have much of an influence. Rather, more positive messages, and looking at how to improve people’s opportunities and ability to reduce food waste make a bigger difference.

🔬In other words, although the likes of you and me can make a big difference, business and governments also have a part to play. Regulating ‘best before’ dates for instance - because these are often set to much earlier than ‘use by’ dates! – is one good example. And in the spirit of help don’t harangue, I’ve linked to an old blog post what I wrote with ideas for reducing food waste. Spoiler: it involves much Tupperware and strategic use of spinach.

🍊PS. This dish is based on one by the brilliant @sabrinaghayour using an onion that had definitely seen better days. Top tip: squeezing a bit of lemon juice and a pinch of salt over your onion will bring it back to life and, as a bonus, macerating onions takes away some of their acridity too.

A huge thank you to the local farms we visited; Gargiulo, Trans Gro, Lipman Family Farms and a stop at Pinhookers Produce Market. We spoke with experienced growers in the tomato fields, greenhouse and packinghouse about their operations and experiences farming. *

We also stopped at the Immokalee Culinary Accelerator for an delicious lunch of local fare, which included fresh strawberries and butternut squash from Farmer Mikes and Martins Food Technology, PLUS samples of Carina’s Caribbean Hot Sauce and Guadalupe Roasters, both members of the Culinary Accelerator. *

I felt inspired to share bring to your awareness an important environmental issue that rarely gets talked about :

That is the impact of the production of refined sugar on animals and the environment.
.
While many are aware of refined sugar’s long term impact on our physical health, we often don’t realize sugar production has a tremendous impact on our earth and animals.
.
According to the @wwf, sugar cultivation and processing (aka refining all the minerals out) impacts loss of habitat, loss of biodiversity, requires large amount of chemicals, high water usage and has contributed to the loss of the Great Barrier coral Reef.
.
Often, the more complex significant environmental implications of our food systems don’t get talked about (e.g refined sugar, canola oil, palm oil, non-organic wheat, avocados to name a few)
.
It has always been my deepest knowing that the further we go away from food as nature intended - whether it’s vegan food or animal based foods : there is always an impact that affects the entire eco system (including people, animals and nature)
.
It can be a lot to navigate the complexities of the food system today and it’s one of the many reasons I’m so passionate about creating products that are as earth and animal friendly as possible -

Making it EASY for you to make chocolate / dessert choices that are good for you AND the earth 🙌.

Thanks for the shout out! @kat.lavers I met some of my food heroes today. Robert Pekin and Emma Kate Rose are the legendary co-founders of Food Connect Brisbane.

This social enterprise distributes local produce from 80 farmers, 40 makers and 23 industries to Brisbane residents and offers a much better deal to farmers who get paid as much as *four times* the rate of larger chains. 
Food Connect also has a radical (read: 100% common sense) approach to cutting waste. They return all boxes to farms for reuse or use them to pack for customers, and when degraded they are cut to smaller pieces as packing inserts, or polystyrene boxes are sent for remanufacture into new products like picture frames. They reuse plastic milk bottles to create their own ice blocks for refrigeration-free transport. They support growers to market often-wasted parts of vegetables like broccoli stems (“poor man’s asparagus!”). Currently all food waste is fed to pigs or sent to local school gardens for composting, but they are working towards an ‘ecology’ of businesses where the output of one (eg. stale bread from a baker), becomes the input for another (eg. beer ingredient for local brewery). And they have just pulled off a phenomenal $2 million crowdfund to expand the project! 👏👏👏 Robert and Emma’s work is all about bringing people together to strengthen local economies and create jobs. They have seen first hand the ingenuity that communities can respond with when challenging circumstances arise.

OUR FOOD HAS A STORY TO TELL// have you ever heard of the term, “terroir” or “taste of place”??? For so many people the taste of certain foods are flashbacks of childhood, a reminder of places you’ve vacationed, or even negative traumas such as when you were food shamed.

Food will always tell a story. The importance of terroir is so profound to food systems change and why I am so passionate about intuitive eating. We are never going to change our food system through food shaming or telling people they shouldn’t eat some of their favorite foods. This is not to say that there are not effective therapeutic diets out there, but more of we need to chill with constantly nagging about nutrient dense foods. Of course our bodies need proper nutrients to function, but our bodies also need the comfort of belonging and enjoyment of foods from our different cultures.

What food brings up terroir to you? These crepes I made for Easter remind me of the time my dear friend, who passed away last year, and our time when we studied abroad in Barcelona. She found this teeny tiny crepe shop in some weird alley and it was magical ✨

We`ve been from beach to mountain, and first Easter in about 9 years without working. Been with my 👨‍👩‍👧‍👦 24/7 for 1,5 week and it has been so good! Slowly learning that relaxing, beeing aware and present are so much more rewarding and effective than working all the time 😌Anybody else had time off this easter?⁣

🍕⁣
1 kg tipo tipo flour⁣
6 dl luke warm water⁣
1 dl olive oil⁣
1 tbsp salt⁣
3 g yeast⁣
🍕⁣
Add some off the water in a mixing bowl or kitchen machine bowl. Add the yeast and mix until incorporated. Wait 10min⁣
.⁣
Add rest of liquid⁣
.⁣
Slowly add flour while mixing on the lowest speed of your kitchen machine.⁣
.⁣
When all the flour are mixed, knead the dough for 10/15min⁣
.⁣
Cover and rest 30min⁣
.⁣
Add salt and a splash of water, use your hands to carefully get tha sal in there⁣
.⁣
Divide in 6-8 pizza balls. Put in an airtight container and rise overnight in a coool place (refrigerator) Wan`t to eat the same day. Let sit on the kitchen counter for 3/5 hours.⁣

Spirulina production in Sardinia 🌊

Spirulina are multicellular and filamentous blue-green microalgae. It grows in water, can be harvested and processed easily and has significantly high macro- and micronutrient contents.
