Hippocrates, the ancient Greek doctor, used asparagus to treat diarrhoea and pains of the urethra. This plant, in fact, contains asparagines which is known for it diuretic properties. The Romans, for their part, appreciated the plants gastronomic qualities. They ate it as an entrée or as a vegetable accompanying fish. Asparagus was largely forgotten during the Middle Ages but continued to be cultivated by the Arabs.

I like my asparagus stir fried with garlic, basic but goood!

Pasta~ the main source of sustenance for troops across different nations throughout history. During WWI, Italian soldiers in the trenches survived on a ration that included less than 100g of pasta with meat. To this day, tinned pasta is a common war meal. As we enjoy a meal with our loved ones on ANZAC Day, let’s appreciate the abundance on our dining table.

Today is ANZAC Day in Australia. A day to remember the fallen soldiers (Australians and New Zealanders) “who served and died in all wars, conflicts, and peacekeeping operations" and "the contribution and suffering of all those who have served". Wikipedia.
Courage, bravery, strength. These are all aspects of soldiers that have paid the ultimate sacrifice. Just want to say thank you for what you have done for our country and family.

I love the movie “Monte Cristo” released in 2002.
In a nutshell, it's a spectacular revenge on the stage of the Napoleonic era.
2002年に公開された映画「モンテ・クリスト伯爵」は大好きです。
一言で表現すれば、ナポレオンの時代を舞台にした壮大な復讐劇ですね。

Lumpia and adobo. That’s Filipino food, but the words derive from the Fujan province of China and the Iberian peninsula, respectively. No food exists in a vacuum, especially not in the Philippines 🇵🇭 where food tells a story of so many blended cultures. Like the people of Fujian China who made their way to Southeast Asian countries like the Philippines and now their tradition of lumpia, the delicious crispy spring rolls, are served at every meal. Adobo refers to the slow cooked pork, a typical cooking method of both the Spanish colonists and the indigenous Filipino people. Today we enjoyed our “classic” lumpia with ground beef and spices and others with curry veggie. My bowl here is rice with juicy “melt in your mouth” adobo pork with spices and vinegar topped with cabbage. It’s been a long week (note the tired second pic of @odbennett ) but Lumpia & Company was definitely the highlight. And shout out to my sister in law @victoriaruan whose ancestors were actually from Fujan! #lumpia #adobo #foodhistory #philipinofood #philipinocuisine #philippinesfood #filipinofoodmovement #foodphilippines @lumpiavb #filipinofood #filipinocuisine🇵🇭 #filipinocuisine #virginiabeach #vabeach

I was listening to the new @gastropodcast episode about curry at work. It’s such an interesting history, and one that I was ignorant of for a long time. I highly suggest listening to gastropod in general, but this episode in particular.
This is a curry I made a while ago, I forget what’s in it, but I’m sure it’s a mix of veggies and lots of spices. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Read this amazing article about historic plants and food at Bartram’s Gardens! This is a historic Quaker house near Philadelphia that has been at the top of my list to visit!! Now I know to save piles of debris if I get into small nooks and crannies in the house!
This magnificent property was purchased by the Eastman family in the mid 1800s, and I have their daughter-in-laws stunning wedding dress from 1864. (bodice pictured) Can’t wait to display it. According to Philadelphia's official tourism site, Pat Olivieri invented the cheesesteak in the 1930s. He decided to grill some beef from the butcher and put it on an Italian roll. A cab driver caught whiff and asked for it on a regular basis. .
.
Today Salt Bae (Nusret Gokce) has perfected the cheesesteak like no other can in the world. .
.
.
The cheesesteak made famous in Philly is devoured by so many celebrities from Will Smith, Kevin Hart to Kobe Bryant. It is perhaps their favorite meal and most likely their last meal ever:

For Tsar Nikolay II and whole Romanov’s family Easter was one of the main holidays of a year. Easter was the main event of the year, more important than even Christmas for every Russian.
The dishes and the table set up during the celebration haven't really changed so much. You can still see - Painted Boiled eggs, - Easter cakes, and - Paskha cottage cheese cake.
Photo - 1900 Osipov’s Family From the collection of the Murom Museum.

During Next week I will show and explain how to cook the real ‼️Russian Easter Cake from 19th century.
‼️How to do old school naturally painted eggs.
‼️And what a hell this Paskha with cottage cheese is.

Doing me some pie history research. 🙋🏻‍♀️ And these swimsuited darlings are my new spirit animals.
.
.
.
Did you know - pies began as meat filled pastries generally reserved for the poor? They were filled with squirrels, crows, rodents - whatever protein you could find. The terms “eat crow” and “4 and 20 blackbirds baked in a pie” aren’t abstract or silly nursery rhymes - they are commentaries on the disparity between the rich and poor. .
.
.
Did you also know that pies are a food of resistance? Americans claimed the term pie - it was reserved for sugared fruit cakes after their break from England. If you order a pie in 🇺🇸 you’ll get a choice of sweet fruit desserts. If you order pie in 🇬🇧 you’ll get a savory crusted meat cake. .
.

(Btw: One of my core strengths is context. Could you tell?!)

Tostada is originally from Mexico around 2000 years ago. Tostadas was said to be invented around the Monte Alban ruins but no specific person invented them. Tostada is a Spanish word meaning "toasted". They are made of corn or flour tortillas that can be served baked, fried or toasted. The foods are usually covered by various toppings with seafood or animal such as cow, chicken, pork, jaiba, tuna, shrimp, crab, chopped octopus, and ceviche. pil pil pil pil pil - allegedly the sound of these 'Gambas al pilpil', the name representing the bubbling boil of the sauce, that is to say: dinner is served.

Pilpil is simply olive oil, garlic, and chilli pepper, a simple emulsion that makes for a wonderful pairing with seafood. And that is based in its origin, in the coastal Basque Country in the 1800s. Pilpil first made it into Ángel Muro's 'Diccionario general de la cocina', the gastromonic dictionary of Spain, in 1892.

And today, the sizzling symphony of the oil and fish still excites all over Spain.

Malta is a group of three islands in the Mediterranean located just 60 miles south of Sicily. It’s also just east of North Africa, so I was able to take a quick one-hour flight there when I lived in Tunisia. 🌍🌊✈️
.
Because of Malta’s proximity to both Europe and Africa, I was not surprised to learn about the many cultures that have influenced Malta’s history, language, and food over the years! Similar to Tunisia and other Mediterranean countries, Maltese food includes tons of fresh fish along with plenty of fresh herbs and vegetables. The only thing that did surprise me a little about their food was that stewed rabbit was the national dish! 🐰
.
I first had this Maltese Tuna Salad as more of a stew in Malta, but more recently have been making it as more of a salad. Here’s how to make it: peel and chop 5 medium-sized potatoes, 3 medium-sized tomatoes, 2 medium-sized onions, and 2 cloves of garlic. Put them in a saucepan with 3 tbsp olive oil and bring to a boil (you may need to add just a little water to help the potatoes cook). Add a pinch of sugar, some salt and pepper and simmer on low heat, covered, until the potatoes are cooked.
Once the potatoes are cooked, add a can of tuna, 1 tbsp each of capers and roughly chopped olives and 2 tbsp freshly chopped parsley.
This dish could be served as a stew if you do not seed the tomatoes, but turns into more of a hearty vegetable side/salad if you seed the tomatoes. Either way it’s delicious! Serve it with a salad and some bread. We had it with a green salad and some freshly baked pita chips last night! 😋🥔🍅🥗🥖

Breakfast doesn’t make you gain weight. Convenience of a quick bite full of loaded calories and not moving enough through the day does. Throughout the ages we have eaten many different ways. We consumed food based on religion, culture, what was available, and even war. It really hasn’t been until fairly recently in history that we have made decisions based on convenience. We move way less and consume way more. We want to play the blame game on what is causing us to gain weight. However, the truth is that we just need to be more aware of what we eat and how much we move. If it’s easier to not eat breakfast and save your calories for later, great, DO THAT. If you tend to work through lunch and are starving when it’s dinner time so you make the wrong choices for your goals, then have breakfast. The fact is that we eat too much so you need to find a way to control the amount going in and find ways each day to move more. Breakfast will only make or break your goals if it fills your calorie cup and causes it to overflow for the day. It doesn’t mess with your “metabolism” or “hormones” enough to change anything. So choose having or not having breakfast based on what it does for your overall consumption of calories for the day and how it makes you feel. Breakfast isn’t always the most important part of the day but for some it can be.

Great article on @financialtimes about eating and cooking habits, value and evolution on our current “always busy” lifestyle. Quite happy and proud of being born in a country (and adopted by another) where food time is still a ritual and an significant part of the day. Just worried about how it will turn to be in a couple of years if we don’t take care of the social and psychological importance of eating in a conscious way and sharing valuable time around a table.
Any book or text from @kitchenbee is always a recommended reading, btw! 👌🏼 ▪️

TYP Art Vote: Gourmet in art - Who can say no to the delicious food? The love for food and the pleasure of eating have always been a subject for art. This week TYP Art Cruise is treating you with a selection of mouthwatering artworks. Bon appétit!
After chocolate and oysters, today's painting is about a less fancy food: white beans.
Mangiafagioli, which means "eat beans" in Italian, was painted by Annibale Carracci in 1585. It is a simple meal, but the man, devouring the white beans from a big bowl, certainly enjoyed it fully.
White beans were introduced to Tuscany in the early 16th century. Alessandro de'Medici, Duke of Florence, found them extremely tasty. Very quickly white beans became very popular in Toscany. The traditional way is to cook them in a wine flask (fiasco), barely covered with water, with garlic cloves, sage, salt, peppercorns and a generous dose of olive oil. The beans are cooked overnight and ready to be eaten the next day, often with bread (pane e companatico).
Do you share the Tuscan passion for white beans? If yes, don't forget to ask the locals to cook them for you if you visit Tuscany!

For @Taste’s 90s issue, I wrote about the decade’s proliferation of a new type of publication: the chef cookbook. Link in bio. A snippet:.
.
“But the real big bang for the chef cookbook—the single title that changed the game forever—was White Heat. The volume, tall and lean like the chef himself, was as much about being a chef, in a restaurant, as it was about chronicling recipes. Readers were plunged into White’s restaurant galley (the book was shot at London’s Harveys in 1987), the medieval tumult captured in Bob Carlos Clarke’s black-and-white photography, which recalled the sinewy rock-and-roll photojournalism of Henry Diltz, Lynn Goldsmith, and Bob Gruen. The pages were filled with Marco-isms—little snippets that described the rigors of the kitchen life. (‘A lot of people say I look like a rock star or designer punk. But I swear it’s the job that has carved my face.’) The book’s structure was revelatory at the time: Its first part depicts the raging bulls behind the fine-china shop; the second shows, in color, the exquisite food they prepared. An admiring Van Aken compares the effect to the shift from black-and-white to color in The Wizard of Oz.
.
“‘White Heat was a real shot in the arm to the idea that a chef was important as a personality,’ says Matt Sartwell, managing partner of the culinary bookstore Kitchen Arts & Letters in New York City and a former (nonculinary) book editor. The book’s influence rippled across the Atlantic, stoking the self-esteem and ambitions of a growing population of American cooks and chefs.
.
“‘He looked like chefs I knew,’ the late Anthony Bourdain—a knockabout New York City whisk at the time—told me in a 2014 interview. ‘He was the first chef who wasn’t a fat French guy. He was an English guy. Long, scraggly hair, rings under his eyes, gaunt cheeks, and he smoked in his fucking cookbook. And then you turn the page and there was this incredibly gorgeous food. Wow! That guy is capable of that? What does that mean for me?’”.

When did we start to waste food? These marrow spoons show that every part of an animal that could be eaten was eaten. The larger ones were for scooping out bone marrow from beef bones and the smaller ones for other smaller animals and poultry. They were carved from the bones and horns of the above mentioned animals. All re-cycled. Nothing wasted! #marrowscoop #antiqueutensils #foodhistory #nowastedfood #vintagekitchenalia #bonemarrow

The biggest sauce bottle I've ever seen, found at the old dump at the weekend . I remember my mum telling us kids about her piggy big sister cooking a huge pan of fried bread on to which she'd pour over a whole tin of baked beans and smothering with Flag Sauce from an enormous bottle. I always thought she was exaggerating but clearly not. #scentbottle #oldbottles #bottledump #history #foodhistory

🔹Someone said, that one day in a different place gives you more than ten years of life at home... Maybe Its time to transform your dreams and goals into reality, escape from daily life and become a curious being? 🔹Кто-то сказал, что путешествия расширяют кругозор больше, чем что бы то ни было и иногда всего один день проведенный в других местах, дает больше, чем десять лет жизни дома.
Может настало время выбраться из привычного пространства и найти настоящего себя?

You have not lived until you have picked wild garlic. Such a thing only being possible for a few weeks each year, pop your bonnets and boots on and forage away. Here, It has been turned into a beautiful bright sauce (wild garlic is a fragrant green leaf). The perfect accompaniment for spring lamb, asparagus and breaded celeriac.

🇨🇺Ropa vieja/Old clothes/古着
This is a cuban dish of boiled and broken beef.
牛肉を煮込んで、崩したキューバの料理。

First of all, except for Spain, Portugal and North Central South America, you may not see much beef like this dish.
まず始めに、スペイン、ポルトガル、アメリカ大陸以外では、この料理のような牛肉を見ることは少ないのではないでしょうか。

Also, I was interested in the appearance of this dish, but I would not recommend buying new beef on purpose.
I will tell you why later🙋
また、私はこの料理の外見に興味を持って作りましたが、わざわざ新しい牛肉を買って作るのはオススメしません。
理由は後で言います🙋

This is a food that is eaten in Spain and Latin American countries as well as Cuba.
これはキューバ以外に、スペインやラテンアメリカ諸国でも食べられている料理です。

The name "Ropa vieja" means Spanish for old clothes.
It was named after the meat was simmered, broken into threads, and smashed.
※There is another theory
「Ropa vieja」という名前はスペイン語で古着を意味しています。
肉を煮込んで、糸状に崩してボロボロになった姿からこの名前がつけられました。
※他説あり

The place where this dish was born is the Canary Islands of Spain.
It was made from the leftover of a stew called Cocido, and it was transmitted to Cuba, and now it has become a designated local dish of Cuba.
※ It goes back to the Middle Ages in detail.  It will exceed the upper limit of the number of characters 🙋

This dish is delicious.  It is a texture that I have never experienced before.
But ... I do not recommend buying and making new beef.  Because it has a very good smell when baking the surface of the meat.
I would recommend making something else and enjoying this dish if it remains.  There are two kinds of fun.

By the way, I ate half at the point of tasting🙋
I could not stop it.
ちなみに、私は味見の時点で半分食べました🙋
止められなかったんです。

I’m thrilled and excited to be taking part in the @britishmuseum Food for thought: evening talk and tastings event this Friday evening! The event will include a tour of the Room 3 display Feeding history: the politics of food with Yi Chen, Curator: Early Chinese Collections. I’ll be giving a talk on food history and there will be a tasting session with a variety of foods.
The evening aims to tell one of the most important stories in human development; that of the rise of agriculture and the global food trade. The discussion will also explore issues of food production and climate change; the cultural significance of food production, process and preparation; and consumption and ways of serving food in different societies around the world.

I have been working part-time at the British Museum since last year in the Community Partnership Team which (having studied archaeology, architecture, museum studies and decorative arts at uni & having worked with community organisations forever) is a dream job and I was thrilled to be asked by Freddie & Bryony to take part in this event with Yi.

The Feeding history exhibition is free and open until 27 May in Room 3 so you should check it out if you can’t make it to Friday’s event. Plus the audio clip is from the British Museum podcast which you should also check out!

A cookbook written by a descendant of a Grass Valley Chinese family inspired a burst of writing activity around the themes of friendship mending after a betrayal and feeling like an outsider within your 'in' clan.

In the book, Jhonny Kan describes teahouse traditions and tea varieties. "....mixing various dried flowers or leaves to emphasize a cretain flavor fragrance - or simply as a lyrical expression of one's feelings."
