Porridge for brekkie, at the request of Jack who was very specific in suggesting chocolate and banana porridge with Coconut sprinkles and maybe some raisins too! That kid knows what he wants. Cheap Tuesday - dinner for 2 for less than £5

Cauliflower and chicken mac & cheese - serves 2 VERY generously for £4.71
😋
FYI, this can come in even cheaper but I used organic chicken and carrots. Tenderstem broccoli is more expensive compared to regular broccoli.

Ingredients 
125g macaroni - 61p
125g grated cheese - 85p
300ml milk - 19p
2 shallots or a small white onion, finely chopped - 10p
1/2 head of cauliflower, broken into florets - 36p
1 chicken breast, grilled for 20 minutes with some olive oil, salt and pepper and then shredded - £1.75
110g tenderstem broccoli - £1
2 carrots, peeled and chopped - 31p
20g flour
20g butter
1 tbsp olive oil
Salt and pepper
Nutmeg (optional)
Breadcrumbs (optional)

Method 
1️⃣ Cook macaroni according to packet instructions - add cauliflower florets to the water for the last 6 mins. Drain and leave to the side.
2️⃣ Cook shallots in the olive oil until they have softened - remove from heat and leave to the side.
3️⃣ Melt butter in a medium saucepan and then stir in the flour - cook for 2 mins.
4️⃣ Whisk in milk gradually for up to 10 minutes - you may want to reduce the heat. Make sure the sauce isn't sticking to the base of the pan.
5️⃣ Stir in most of the grated cheese and season with salt and pepper. Add a pinch of grated nutmeg (optional).
6️⃣ Tip the cooked macaroni, cauliflower florets and shallots into a baking dish. Add the cheese sauce and then the chicken before giving everything a good mix.
7️⃣ Finish with the remaining cheese and a sprinkling of breadcrumbs and more pepper (both of these again are optional).
8️⃣ Cook the mac & cheese, fan oven at 180 degrees Celsius for 20 - 30 mins... until the cheese is bubbling (and breadcrumbs are golden if using).
9️⃣ While your mac & cheese is cooking in the last 10 mins, bring a pan of water to the boil and cook your carrots and tenderstem broccoli to your preference. I don't like mushy veggies, plus you lose the goodness! 🔟 Plate up the mac & cheese with the veggies and enjoy!

I’m not a fan of any berries to be honest but these are all that I can have now 😟 I went for a kinesiology appointment yesterday in the hope of finding out if I was allergic to soya. This was confirmed! I have also been told to avoid wheat, oats and FRUIT!!! As I said I can still have berries but that’s it, no bananas, apples, grapes, nothing...Absolutely gutted! I stood in the Waitrose free-from aisle after the session and burst into tears. It was genuinely amazing though, I enjoyed the experience and I’ll be going back in a couple of months to see if I have fixed my problems🤞🏼

Jack would happily eat the same cereals for breakfast every day and it can be hard to persuade him to change it up, but He clearly shares my love for granola as he has already asked if he can have it for breakfast again tomorrow! We’ve spent all afternoon tidying up the garden so celebrated with 🎉🎉 the first BBQ of the year 🎉🎉 tonight! I think the secret of a good BBQ is making the veggies & salads the main players and cutting back on the cheap white baps and piles of meat. 
I made- A simple salad with lettuce, cuc, toms, avo, spring onions & grated carrot. A family favourite- grated cooked beetroot & mayo 👌🏼(trust me you’ll love it!). I prepped some veggies for the BBQ- a quartered courgette, a yellow pepper & some corn on the cobs. Finally I roasted some sweet potatoes in wild garlic butter & tossed in a tin of chickpeas, soooo good 👌🏼👌🏼 what’s your favourite summer BBQ salad?

We’ve woken to another dull and misty morning here, it had all the porridge feels and so there was only one thing on offer for breakfast today. Porridge. Anyone who has followed me for a while will know I don’t spend ages faffing in the kitchen and generally don’t use tons of uncommon ingredients. I just try to serve a variety of real, heathy family foods. I have recently started making sure Oliver is served a high fat food at every meal as his appetite is so variable. I am also trying to be more aware of adding some protein in at breakfast because our non dairy milk / yoghurt are not good protein sources like the dairy equivalents are, and we all know well balanced meals keep us feeling fuller for longer. Quick wins this morning with a sachet of instant oats made with @oatly Milk and some chia seeds (added for protein, extra fibre, a heap of antioxidants and nutrients). Jack has his finished with unsweetened cocoa, mashed banana, raisins and seeds (as requested). Oliver and I had a spoonful of almond nut butter and a sprinkle of cinnamon. Mission complete. The chia seeds went completely in noticed 🙌 Both my boys are fruit fiends so we had a bowl of mixed fruit on the table to share too. Egg-fried rice - serves 2

This was enough for me but you could add chicken to this when frying the veg or serve alongside a piece of grilled chicken. 
I used to worry I wasn't getting enough protein but really grateful for the books by @doctors_kitchen which focuses on plant-based protein... this is definitely my preference! 👌 
Ingredients
1 small red and green chilli, sliced (optional to keep the seeds)
1 clove of garlic, finely chopped
Thumb size piece of ginger, grated
1 shallot, finely chopped
1 medium carrot, cut into matchsticks
3 stems of tenderstem broccoli, each cut into about 3 pieces
1/2 green pepper, sliced
2 chestnut mushrooms, sliced 
1 pak choi, chopped 
Handful of frozen peas and sweetcorn 
125g cooked rice (I used brown basmati)
2 eggs, whisked with salt and pepper 
2 tbsp soy sauce
1 tbsp sesame oil
Generous pinch of sesame seeds
Chopped coriander, to serve (optional)

Method 
1️⃣ In a wok, toast the sesame seeds in the sesame oil on a medium heat for 2 minutes
2️⃣ Add the garlic, ginger, chilli and shallot - fry for 4 - 5 mins
3️⃣ Add the broccoli, carrots and pepper - fry for a further 3 - 4 mins
4️⃣ Add the mushrooms and pak choi and fry for a further 3 - 4 mins
5️⃣ Add 1 tbsp soy sauce, frozen peas and sweetcorn and cook for 1 min
6️⃣ Add the cooked rice and other tbsp of soy sauce
7️⃣ Push the rice & veggies to one side of the wok and then pour in the whisked eggs
8️⃣ Wait until the eggs look like they're beginning to set (like an omlette) and then scramble before mixing in with the rice & veggies
9️⃣ Cook for another 3 - 4 mins until the eggs are cooked through
🔟 Serve immediately and garnish with the coriander if desired

This was enough for me but you could add chicken to this when frying the veg or serve alongside a piece of grilled chicken.
I used to worry I wasn't getting enough protein but really grateful for the books by @doctors_kitchen which focuses on plant-based protein... this is definitely my preference! 👌
Ingredients
1 small red and green chilli, sliced (optional to keep the seeds)

The boys all love these pancakes and have no idea that they are actually pretty nutritious 🙌 To make the pancake batter mix the flesh of a medium sweet potato (about 100g) with 1 egg, 100ml milk (@oatly), 1tbsp melted butter, 65g buckwheat flour, 0.5tsp vanilla extract, 0.5tsp cinnamon and 1tsp baking powder. Friday night bowl food! 
Risotto - serves 1

Ingredients
65g arborio rice
2 tbsp olive oil
1 clove garlic, finely chopped
1 small shallot, finely chopped
2 - 3 chestnut mushrooms, sliced 
35g frozen peas 
300ml vegetable stock (I use 1tsp Bouillon powder or one stock cube is fine)
15g grated cheese, I like using Red Leicester
Knob of butter
Black pepper, to taste 
1/4 lemon wedge 🍋

Method
1️⃣ Place olive oil, garlic and shallot in a medium saucepan over a medium heat. Fry for 5 minutes.
2️⃣ Add mushrooms and fry for a further 3 minutes.
3️⃣ Add arborio rice and mix well, you want the olive oil to coat the grains of rice. Give it 1 - 2 minutes and you'll see the edges of the grains start to turn translucent.
4️⃣ Pour in 2 - 3 tbsp of the stock and stir the risotto well.
5️⃣ Once the liquid has evaporated, add some more stock. Stir and add more stock... and so on! It will take about 20 - 25 minutes for the rice to cook. Try a spoonful after this time to double check! Add the frozen peas after about 20 minutes.
6️⃣ Once the rice is cooked, turn off the heat and add the butter and cheese. Stir well until both have melted.
7️⃣ Finish by squeezing the lemon juice and adding black pepper.
8️⃣ Serve with a portion of vegetables - I've gone for tenderstem broccoli, sugar snap peas and carrots today.

We had some wild garlic in our Riverford veg box this week. I’ve never used wild garlic before, scared to forage my own leaves and pick something harmful by mistake. In honest I didn’t really know what to do with it. The Riverford suggestion was to stir though soups / stews / risotto or turn into pesto. The pesto really appealed. I made this up the other day so the garlic was fresh. It can keep for a week in the fridge and was supposed to be last nights dinner but we ended up having party tea for my dads birthday. I have popped it into the freezer for next week instead. To make whizz 100g wild garlic leaves, add in 50g grated Parmesan and whizz some more. Next add in 50g toasted nuts (walnuts), juice of half a lemon and olive oil to get desired consistency. I like a thick pesto. I liked it as it was but hubs found this a little strong so I went on to add in some spinach leaves and extra parmesan to tone it down a little. Aubergine two ways for the aubergine lovers (one of my fav veggies) 🥙

Super quick, easy and delicious!

Ingredients:
2 large aubergines
2 medium opinions
4 garlic cloves
4 fresh tomatoes
1 bell pepper
2 tbsp tomato paste
3 small sweet potatoes
A handful of fresh spinach
Oil, salt and black pepper

Prep:
1. Cut each aubergine lengthways into very thin slices. Place onto a baking tray.
2. Brush with olive oil and season with salt and pepper
3. Bake for 15 minutes in preheated oven (200 degree C or gas mark 6). Turn the slices over and bake for another 10-15 minutes or until pale golden.

For the tomato sauce:
1. Finely chop the onions and fry until golden.
2. Finely chop 4 tomatoes, grate the garlic clove and add them to the onion, add the tomato paste, season with salt and pepper and cook for 5 minutes. 
Burani: 
1. Cut the remaining 2 tomatoes and the bell pepper in circles.
2. Take a medium frying pan and layer the aubergine slices, followed by tomato sauce (use half) and fresh tomato and pepper slices (half of the aubergine slices will create about 3 layers).
3. Cover the top with clean cloth and a tight-fitting lid, steam on very low heat for 20 minutes.

Aubergine wrap:
1. Microwave the sweet potatoes for 5 minutes, mash them and mix with the spinach, season with salt and pepper.
2. Fill in each of the aubergine slices with the mix and wrap.
3. Place them in the sauce, cover the top and leave on low heat for 20 minutes.

Serve with garlic and mint yogurt and naan.

1. Cut the remaining 2 tomatoes and the bell pepper in circles.
2. Take a medium frying pan and layer the aubergine slices, followed by tomato sauce (use half) and fresh tomato and pepper slices (half of the aubergine slices will create about 3 layers).
3. Cover the top with clean cloth and a tight-fitting lid, steam on very low heat for 20 minutes.

Aubergine wrap:
1. Microwave the sweet potatoes for 5 minutes, mash them and mix with the spinach, season with salt and pepper.
2. Fill in each of the aubergine slices with the mix and wrap.
3. Place them in the sauce, cover the top and leave on low heat for 20 minutes.

Serve with garlic and mint yogurt and naan.
