@bonchonchicken had its soft opening in West Chester! For family night, we all walked up to give it a try. Known for their fried chicken, but they didn’t have all the menu items available. I got the chicken fried rice and ate a half portion. Calories are in the menu, but not macros. Nutrition info can be found online. Everything on the table was delicious! But this place is definitely for a treat meal - not something I’d eat on the regular because of the crazy fat content.  Good luck in WC, Bonchon - you have a fun thing going!

You’re going to want this one for the weekend - perfect to snack on as you relax in the evening or travel around during the day because yes…this packs up in your purse👌🏽👛 INGREDIENTS:
*14oz (400g) can chickpeas rinsed & drained
*1 tbsp (25g) maple syrup
*1 tbsp (15g) coconut oil melted
*1/2 tbsp (4g) ground cinnamon

STEPS:
1. Preheat oven to 190C/375F. Spread chickpeas on baking tray and pop in oven when heated. Set timer for 30 minutes.

2. When done, put chickpeas in bowl with all other ingredients and mix well. Slide back onto tray  and cook for an additional 5 to 10 minutes (more = crunchier)

3. Remove from oven, leave to cool and then enjoy!! Have you tried any sweet chickpea recipes like this before??

Forgot to post from last night.  Chili chicken curry!!!! Spice level was on point.  Lots of leftovers still.  Had the thought the other day that this recipe could easily be vegan if you only make the sauce, substitute out the chicken.  Thoughts for meat-free days.  Plant based does not always mean 100% vegan!  Means the majority of what you eat comes from a plant.  That's why there's 100% plant based, and just plant based.

You’re going to want this one for the weekend - perfect to snack on as you relax in the evening or travel around during the day because yes…this packs up in your purse👌🏽👛 INGREDIENTS:
*14oz (400g) can chickpeas rinsed & drained
*1 tbsp (25g) maple syrup
*1 tbsp (15g) coconut oil melted
*1/2 tbsp (4g) ground cinnamon

STEPS:
1. Preheat oven to 190C/375F. Spread chickpeas on baking tray and pop in oven when heated. Set timer for 30 minutes.

2. When done, put chickpeas in bowl with all other ingredients and mix well. Slide back onto tray  and cook for an additional 5 to 10 minutes (more = crunchier)

I admit - I'm crazy about chocolate chip cookie dough and have been known to eat a scoop here and there! So I was so excited when one my favorite food bloggers Allie Roomberg (Baking a Moment) presented this tasty, amazing no-egg-edible recipe:

Ingredients:
2 1/2 cups all-purpose flour
3/4 cup unsalted butter (11/2 sticks)
3/4 cup light brown sugar loosely packed
1/4 cup granulated sugar
3/4 teaspoon kosher salt
1/4 cup milk
1 1/2 teaspoons vanilla extract
12 ounces semi-sweet chocolate chips

Directions: (1) Preheat the oven to 350 degrees F, and spread the flour onto a baking sheet in an even layer. (2) Toast the flour in the oven for 5 to 10 minutes. (3) Cream the butter, brown sugar, sugar, and salt together in a large bowl on medium-high speed until pale and fluffy (3 to 5 minutes). (4) Stir in the milk and vanilla. (5) Mix in the flour until blended. (6) Fold in the chocolate chips. .

How To❓
▫️Prep your veggies & then heat up some EVOO on a pan. ▫️Sauté your onions & garlic first until translucent. Then add in the sweet peppers & grate sweet potato (I eyeballed enough for 1 omelette). Sauté for another minute or so before adding in your spices.
▫️Mix evenly & then add in a handful of Spinach. Cook until the spinach has wilted. Set aside.
▫️Crack your eggs into a bowl & whisk to combine. Sprinkle in some salt & pepper. Add to the same pan with some more EVOO.
▫️Then add in your cooked veggies to one half & some Mexican shredded cheese to the other. Then flip over the omelette side with cheese & fold it on top of the veggies.
▫️Serve with some sliced avocado & microgreens.

▫️1/2 head (2 cups) Cauliflower
▫️1/4 Onion, roughly sliced
▫️2-3 cloves Garlic, minced

▫️1/4 cup Vegetable Broth
▫️3/4 cup Vegan Parmesan (@followyourheart)

How To❓

▫️1 box Chickpea Pasta (@eatbanza)
▫️1/2 head (2 cups) Cauliflower
▫️1/4 Onion, roughly sliced
▫️2-3 cloves Garlic, minced
▫️3/4 cup Unsweetened Almond Coconut Milk (@silk)
▫️1/4 cup Vegetable Broth
▫️3/4 cup Vegan Parmesan (@followyourheart)
▫️2-3 Handfuls of Spinach

How To❓
▫️Preheat oven to 425°.

SWIPE TO POP 👉🏼 Tried to recreate a breakfast skillet I had for brunch months ago but used regular potatoes instead of sweet potatoes 😋 like who am I?! 😱 Trust me, I love me some sweet potatoes & use them 90% of the time but thought I’d switch things up today 🤷🏽‍♀️ Happy Saturday!✨

▫️Mini Potato Medley, cubed
▫️Mini Sweet Peppers, sliced
▫️1 Jalapeño, sliced
▫️1/4 Onion, cubed
▫️2 cloves Garlic, minced

▫️1 Poached Egg (@vitalfarms)

▫️1 Egg Yolk (@vitalfarms)
▫️1 clove Garlic, minced
▫️1/4 cup EVOO
▫️Salt & Pepper
▫️2-3 tbsp Avocado Mayo (@chosenfoods)

How To❓
▫️Start off by prepping your aioli. Add all your ingredients, except the mayo, to a blender & blend until evenly mixed. Then add to a bowl with your mayo & whisk till evenly combined.
▫️For your poached egg, boil some water with 2 tbsp of Apple Cider Vinegar. Then create a whirlpool with a spoon & crack in an egg. Cook for roughly 3-4 mins.
▫️For your bfast skillet, prep all your veggies. Then add some EVOO to your skillet & add in your garlic & onions. Cook until translucent. Then add in the potatoes, sweet peppers & jalapeños. Cook for another 3-4 mins before adding in your spices. Mix evenly & cook for another mins.
👉🏼 Add some mashed avocado to your skillet & top with a poached egg. Drizzle with your garlic aioli 😋. Sprinkle some salt & pepper, then top with fresh cilantro.
