Looking for a tasty vegan cheese recipe?! This vegan ricotta cheese is super simple to make, with only a few key ingredients. It is rich, creamy and is definitely a recipe you will want to keep coming back to!

Recipe
2/3 C ground almonds aka almond flour
¼ block of extra firm tofu
2 tbsp lemon juice
2 tbsp nutritional yeast
½ tsp salt
3 tbsp plain almond milk or any non-dairy milk

Directions: toss all ingredients into a food processor and blend until combined. Place the contents into a piece of cheese cloth (a regular dish towel would work) and form into a ball or whatever shape you want and place into a bowl or container. Let sit in the fridge for a few hours to chill. If you have time, let it sit overnight because the flavours will really come together!

This is perfect to serve as a soft cheese option on a cheese board or appetizer platter. I also always use a double batch of this ricotta in my lasagna!

I used to make this with purely almond flour but I now prefer the texture with a bit of tofu in it. I also love making vegan cheese substitutes with some tofu because it can be a good source of calcium.

Making homemade granola is incredibly easy. You can eyeball all of the proportions and use whatever ingredients you have on hand. Here’s a guide to make your next batch!

▫️place parchment paper on a baking sheet
▫️add rolled oats, sunflower seeds, almond slivers, pumpkin seeds, hemp hearts, and chia seeds to the pan
*this is the step where you can get extra creative with the nuts and seeds you choose**
▫️coat all ingredients with a drizzle of maple syrup, coconut oil, cinnamon and salt
▫️bake at 350°F until it becomes slightly crunchy
▫️add shredded coconut and dried fruit (i usually use dates) ... it is important that these are added AFTER baking otherwise they will burn
▫️store in a jar and use for your next smoothie bowl or fruit cereal

Simple and tasty spiralized beet salad with lime vinaigrette is the perfect lunch meal or side dish! This colourful salad is packed with flavour and nutrients 😋

I was never a fan of beets as a child, but I had only ever tried boiled beets. I'm still not a fan of boiled beets as I find they taste like dirt 😂 But I have fallen in love with the fresh taste of raw beets and spiralizing beets into noodles for a salad is the perfect way to try this tasty and unique vegetable.

This salad also includes lentils for some plant-based protein, pumpkin seeds for a boost of healthy fat and iron, plus apples for a fresh and sweet crunch! The lime vinaigrette is super fresh and brings everything together.

Ingredients:
340 g spiralized beet noodles ~4 C or 2 medium beets
1 19- oz can lentils drained and rinsed
1 large green or yellow apple thinly sliced
½ C pumpkin seeds

Lime vinaigrette:
Juice of 2 small limes ~2 ½ tbsp
2 tbsp olive oil
1 tbsp maple syrup
½ tbsp Dijon mustard
¼ tsp salt
Black pepper to taste

Prep the salad ingredients, whisk together the vinaigrette, and toss together!

🥗RECETTE SALADE EXPRESS

Je ne sais pas toi mais le temps sent l'été. Il fait chaud. Il fait trop chaud. Ce genre de temps qui ne te donne même plus faim.

Ce n'est pas encore la saison des tomates mais tu peux kiffer ton dîner avec une bonne salade fondante et qui croque sous la dent.

Sauce César
✨200g de tofu soyeux
✨ 1/2 citron
✨2 gousses d'ail rôties ✨ 1 cuillère à café de câpres et de jus de câpres ✨2 cuillères d'huile d'olive
✨1/2 cuillère de sucre
✨Sel et poivre au goût 
Croutons de pain
✨Du pain sec
✨De l'huile d'olive
✨Du sel

Grosso modo mélange tous les ingrédients de la sauce et laisse reposer une heure au frigo. Fais cuir tes croûtons au four jusqu'à ce qu'ils soient dorés. Mélange le tout dans de la salade et boum bébé. 
Cette recette est pleine d'ail. Voilà c'est dit. Moi je trouve que c'est trop bon et en plus c'est un anti bactérien naturel. Mais si tu en fais pour ton date, préviens-le avant histoire qu'il ne stress pas et dis lui que tu l'aimes comme il est, haleine aillée ou non.

🥗RECETTE SALADE EXPRESS

Je ne sais pas toi mais le temps sent l'été. Il fait chaud. Il fait trop chaud. Ce genre de temps qui ne te donne même plus faim.

Ce n'est pas encore la saison des tomates mais tu peux kiffer ton dîner avec une bonne salade fondante et qui croque sous la dent.

Sauce César
✨200g de tofu soyeux
✨ 1/2 citron
✨2 gousses d'ail rôties ✨ 1 cuillère à café de câpres et de jus de câpres ✨2 cuillères d'huile d'olive
✨1/2 cuillère de sucre
✨Sel et poivre au goût
Croutons de pain
✨Du pain sec
✨De l'huile d'olive
✨Du sel

Grosso modo mélange tous les ingrédients de la sauce et laisse reposer une heure au frigo. Fais cuir tes croûtons au four jusqu'à ce qu'ils soient dorés. Mélange le tout dans de la salade et boum bébé.
Cette recette est pleine d'ail. Voilà c'est dit. Moi je trouve que c'est trop bon et en plus c'est un anti bactérien naturel. Mais si tu en fais pour ton date, préviens-le avant histoire qu'il ne stress pas et dis lui que tu l'aimes comme il est, haleine aillée ou non.

Vegan shortbread biscuits. Mmm delicious and very easy to make! 
Ingredients:
200g dairy free butter
300g plain flour
100g Sugar
Put the butter and sugar into a bowl and mush together until it's smooth. I used a wooden spoon. Then pour in the flour and using your hands, mush the ingredient together until you make a dough ball. This bit gets really messy 😀 tip: if it's crumbling apart, add some more flour. Once that's done, mould chunks of the dough to whatever shape you want and put it on a baking tray. I made hearts! ♥️ Bake in the oven for 12-15 minutes. It was so delicious that I ate one straight away! Wait for it to cool and dust some icing sugar on top.✨ #yummy #veganbiscuits .

Vegan power seed energy bars — packed full of omega 3s, healthy fats, protein, fiber & vitamins 🍌🥥🍎🌰🥜 these energy bars are super easy and perfect for MEAL PREP! I like to make some kind of energy bar, granola, or fruit/nut bread as a part of my “meal prep” so that I have healthy, substantial snacks that are delicious and don’t leave me hungry when I’m away from the house. You guys know I’m ALL about the snacks and I’m ALWAYS packin’ snacks to go!! The ingredients for these energy bars are simple and AMENABLE — please feel free to mix and match for what you have and what you like! All you really need to keep is the cups of nuts/seeds and the cups of wet ingredients! If you have questions about the recipe just DM me (like always!) 💛🌻 MIX TOGETHER:
1 medium mashed banana
1/2 C apple sauce (or another banana) 
1 tsp cinnamon 
1/2 tsp nutmeg
1/2 tsp salt 
THEN ADD DRY INGREDIENTS: 
1 C oats 
1/2 C sunflower seeds
1/2 C sliced almonds
1/2 C crushes walnuts
1/2 C chia seeds 
1/4 C raisins 
1/4 C shredded coconut - MIX UNTIL EVENLY COMBINED
- Spread in a 9x9 baking pan lined with parchment -paper and really press it down so it is all flat - Bake for 25-28 minutes until the edges are golden brown - Remove from oven and let cool completely (1 hour)

How is your Easter break so far? Made any vegan egg salad? Or scrambled tofu?

I always loved to eat eggs.. Until I found out what happened in the egg industry with the male chickens..it makes me so sad that a new life on earth is born and killed within 24 hours or less.. Thank heavens we don't need eggs to eat egg salad! I made an amazing look-and-taste a like egg salad.

Ingredients: - one block of firm tofu
.-1 shallot, very finely chopped
- 2 full tbs vegan mayonaise
- 1 tsp curry powder
- 1 tsp turmeric
- 1/2 tsp spicy paprika powder
- salt / pepper
- pinch of Kala Namak to taste
- 1 tsp dyon mustard
- splash of hot sauce
- handful of chives finely sliced

Method:

Drain the tofu, put it in a colander and press something heavy on it. Leave for 30 minutes. 
Meanwhile, put all the ingredients together in a bowl. 
Roughly chop the tofu. Make a variety of chunks. Put it back in the colander and put a clean towel on it to remove any excess moisture. 
Mix the tofu with the other ingredients and fold it well.

Stuff some pitabread with this Vegan egg salad and some crunchy spinach leaves..

My #eldestlove had been asking me to make banana pancakes together. Note together, because she wants to know how. So finally we finally bought some bananas 🍌 and it’s good enough to be cooked today and the results was good. The texture is perfect, moist and fluffy. It was a made up recipe but turned out good, perfect for me! 👌🏻😘 so, this time I’ll share the recipe. It’s very easy.

Dry ingredients:
1 cup (240ml) flour
1/2 cup (120ml) almond powder
1/2 cup (120ml) sugar
1 tsp (5ml) baking powder
A pinch of salt
.
Wet ingredients:
2 tsp (10ml) olive oil (or any veggie oil)
1/3 cup (80ml) water
2 medium size bananas, mashed
.
1. Mix all dry ingredients and separately mix the wet ingredients.
2. Mix both dry and wet ingredients altogether in one bowl.
3. Pre-heat the non sticky pan in medium heat then turn to small heat when pancakes cooking start.
4. Let it cook for about 1 minute or more until it’s well cooked then flip to the other side and let it sit until well cooked too.
.
This recipe can make 10 pancakes in very medium size. Give it try for an easy breakfast or a quick brunch. Happy Sunday! 😉.

🐰 3 cdas de panela 🐰 1 cdita de esencia de vainilla 🐰 1 pizca de sal
🐰 120 grs de chocolate amargo

Mezclar todos los ingredientes, menos el chocolate, en una procesadora hasta que quede bien mezclado. Poner la masa en el refrigerador durante 30 minutos o más. Luego armar bolitas del tamaño que quieran. Derretir el chocolate a baño María y bañar las bolitas. Decorar a gusto y refrigerar.

Made my second “cheesecake”~ Ingredients:

Crust:
1 cup walnuts
1 cup rolled oats
2 tbsp flax seeds + 5 tbsp water
1 tbsp maple syrup
Make flax egg with maple syrup and set aside. Process walnuts and oats till fine. Add in flax egg and process to form dough for the base. Bake for 10 min.

Filling:
2.5 cups cashews
1 cup lemon juice
Zest of 1 lemon
1 cup maple syrup
1 tbsp vanilla extract
2 cups berries of your choice
Blend everything. Pour over crust and refrigerate for 2 hours.

I popped the meatballs in the oven & they were fab, didn’t dry out at all 😁 lovely & crispy on the outside & soft on the inside without an overpowering taste so could be used in any dish🌱❤️ Also I could eat pasta everyday without question!! #favcarb -

Galletas de avena-manzana y chocolate
Ingredientes:
🍪 2 cucharadas de linaza molida
🍪 6 cucharadas de agua
🍪 1 1/2 cda de aceite de coco
🍪 4 cditas de syrup
🍪 4 cdas de panela (más si les gustan dulces)
🍪 1 cucharadita de vainilla
🍪 4 1/2 tazas de avena
🍪 1/2 taza de almendras
🍪 1/2 taza de nueces
🍪 1 pizca de sal
🍪 1 cucharadita de canela
🍪 1 taza de pure de manzana
🍪 Chips de chocolate opcional

Pre calienta el horno al máximo. En un tazón agrega la linaza y las seis cucharadas de agua para que se active.
Aparte procesar la avena, luego las almendras y las nueces hasta que quede todo molido, agregar la panela. Aparte mezclar la linaza y el agua, agrega el aceite, el syrup, la vainilla, la canela y el puré de manzana. Mezcla super bien y después agrega a la mezcla de las almendras, las nueces y la avena y la pizca de sal. Arma tus galletitas del tamaño que quieras y arriba ponle los chips de chocolate o chocolate derretido🐷. Hornear durante 15 minutos a 250°C.

Hi guys,

This morning I saw a post from @apinchofplants that looked so indulging that I felt the need to make the recipe right away! Vegan queso sweet potato soup.. I followed the recipe. I only did not have any green chilis so I replaced that with half a courgette.

I served the soup with some Tortilla crisps, hot sauce, coriander and jalapeños. This was sooo yummy. The soup is also very kidsproof! Jane loved it! Especially to have crisps for dinner😂

Bruschetta is my all-time favourite appetizer! It's so fresh and flavourful with basil, garlic, and balsamic vinegar. As the weather gets warmer, I'm starting to crave recipes like this!

This is an older recipe on my website, but I'll never tire from it. You can always take this up a notch (or two!) by making some vegan bruschetta mac and cheese (recipe on my website, search bruschetta or cheese)! Just imagine a dish of creamy vegan cheese sauce covering pasta, topped with fresh bruschetta and baked together 😍

Recipe for bruschetta:
3 C diced Roma tomato, seeds removed
½ C chopped fresh basil leaves
¼ C finely diced onion (red onion is preferable)
2 medium sized cloves of garlic, finely minced
1 tbsp balsamic vinegar, or to taste
½ tsp salt
1 tsp olive oil (you could leave this out, it just ensures the bruschetta will stay moist after baking it)

Chop all the veg and toss together with the other ingredients. Top some sliced baguette, flatbread, or mac and cheese with the bruschetta and bake for 10-12 minutes for baguette/ flatbread or 20-25 minutes for mac and cheese!

Before I went vegan I never heard of 'nutritional yeast'. Nowadays I can't picture my life without it! It is such a brilliant cheesy addition to all kinds of food. I do think you have to add it to a warm dish. That brings out the best flavors!

Tried out Bol Foods the other week 😋 never had one before but had seen good things & this Sri Lankan Samba did not disappoint 👌🏻 lovely creamy slightly spicy sauce packed with lentil & veggies- cauliflower, butternut squash, pepper & spinach 😋🌶 would defo recommend but maybe only when they’re reduced or on offer 😁 Which is your fav? 🌱❤️

I’ve been slowly reintegrating foods in my diet. Some have gone well and others haven’t but the key is to keep trying. 
This bowl was too delicious to even care about presentation and it has 100% FODMAP-safe ingredients so I thought I might as well share it. 
Btw, tempeh + oyster mushrooms = heaven 🌿

This vegan sour cream is made with cashews and tofu for a tasty balance of plant-based protein and healthy fats! Nutritional yeast and lemon juice add the perfect flavour for a dairy-like creamy dip, sauce or spread - you can use this recipe in so many ways!

Recipe:
1 C cashews, soaked overnight
¼ block extra firm tofu
¼ C water (may need more to help it blend)
Juice of half a lemon (about 2 tbsp)
1 tbsp nutritional yeast
1 tsp apple cider vinegar
¾ tsp salt

Directions:
Place all ingredients into a blender or food processor. Blend until smooth.

I love using cashews as a vegan dairy substitute, but I also like to add in some tofu as well. Why? Tofu is a great source of plant-based protein but it's also high in calcium.

Many dairy substitutes are lacking calcium so using tofu is a great option for making you vegan cheese substitutes a bit more nutrient dense and have a nutrient profile closer to cow's milk. Tofu blends well into a creamy texture and is quite thick so it can make vegan dairy products that are rich and delicious.

⇸Roasted cauliflower⇷

☽ Feeds 2 peeps
⠀⠀⠀⠀⠀⠀⠀⠀⠀
☞What you need
⌲1 small cauliflower (<1.5kg)
⌲2tbsp olive oil + extra oil (I went for garlic chili oil)
⌲3 cloves of garlic
⌲1 small piece of ginger (peeled) around 3cm
⌲1/4 tsp salt, paprika powder ⌲1/2 tsp coriander seeds, mustard seeds & fennel seeds
⌲1 tsp smoked paprika
⌲A pinch of cayenne & pepper to taste
⌲Juice + zest of one lemon
⌲1/3 cup hazelnuts, whole or coarsely chopped
⌲1/4 cup sunflower seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
☞How to make it
⌲Preheat your oven to 180°C
⌲Remove the stems at the base of the cauliflower, rince it under clear water and put it into an oven safe pot
⌲Break the whole spices down with a mortal and pestle ⌲In a mixer, blend together 2tbsp olive oil, garlic, ginger and all the spices into a lose paste
⌲Rub it on the cauliflower until it’s covered, put the lid on the pot and bake for around an hour
⌲After an hour, remove the lid, pour over some extra oil over the cauliflower and add the nuts & seeds into the pot
⌲Bake for another 20 minutes without the lid, then serve the cauliflower with all the nuts, lemon juice and lemon zest on top
⠀⠀⠀⠀⠀⠀⠀⠀⠀
☾You can serve it on its own or your favorite side of pasta, rice, curry, some greens, whatever you fancy!

Toppings: chia seeds, frozen blueberries, granola, vegan chocolate chips, peanut butter. // I waited ALL DAY for this and I was not disappointed!! It is a much thicker texture than a smoothie bowl, but I would recommend freezing it for a little bit so it doesn’t melt as fast (I was too excited to be patient haha)

I love @waitroseandpartners but sometimes the prices are insane! 🙄 I find about 10/11am they reduced by half & usually the good stuff is still there 🌱❤️

☽ Probably the best way to make a cauliflower edible to anyone

☞I was very sceptical at first. To roast a whole cauliflower and make a meal out of it?
I mean some people roasted watermelon to make it ressemble meat and let's be honest who would eat that?🍉 (hint: not me.)
☞As for the cauliflower, it DOES taste good, the texture is very soft and steamy (I baked it in the oven for more than an hour covered with a lid), the spices were on point so was the oil content of this dish. ✔
☞I figured out so much since I have stopped being oil-free. I figured about simple tasty stuff. Fat carries so much of the flavour of a dish, it allows spices to bloom and get super fragrant. No need to fry up everything but using a bit of fat gives me better chances to eat something tasty (and satisfying). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
☞Whole roasted cauliflower
☾ Homemade Indian spice mix paste
☾ Roasted nuts & seeds (sunflower & hazelnuts)
☾ Lemon juice + zest (on everything)
☾ A Nepalese chutney and some fresh sprouts
